We use the best pork from local Quebec producers in the making of our pork escalopes and preserve the bone so that they retain as much of their succulent juice and natural taste as possible. The pork is pre-marinated in its own broth so it remains irresistibly juicy and tender, even if cooked too long. Each cutlet is carefully cut to adorn the rib which, thanks to this technique, cleans and exposes it, offering a beautiful, refined presentation. These pork chops are meaty and tender and will add a sophisticated touch to your meal no matter how you choose to serve them.

Thaw before cooking, either the day before in the refrigerator or in cold water for 30 to 35 minutes.
Cooking mode
Baking: Preheat oven to 400°F. On a baking tray, cook for 20 to 25 minutes, turning halfway through cooking.
BBQ cooking: On high, sear for 3 to 5 minutes per side.
Suggestion: Sear in fat for 1 to 2 minutes per side over medium-high heat before cooking in the oven.
